Arequipe apple pie

Cinnamon-lemon apples under a double crust with ribbons of arequipe tucked between the layers.

Ingredients

  • 2 pie-crust rounds
  • 900 g sliced apples
  • 90 g brown sugar
  • 2 tbsp cornstarch
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 180 g arequipe
  • 1 egg for brushing

Method

  1. Heat oven to 200°C / 400°F. Toss apples with sugar, cornstarch, cinnamon and lemon.
  2. Line a 23 cm pie plate with one crust. Add half the apples, dot with arequipe and cover with remaining apples.
  3. Top with the second crust, seal, cut vents and brush with egg.
  4. Bake 20 minutes at 200°C / 400°F, reduce to 180°C / 350°F and bake 40–50 minutes more. Rest at least 2 hours.
Arequipe noteResting lets the juices thicken; slicing hot gives you delicious but messy pie.
